Work in the vine

  • Fertilization : only organic products, no synthetic products
  • Ploughing of the soils, no weedkillers using
  • We let the grass grow in the vine’s row to have competition between Bunches of grapes and grass. It gives more concentrated wine
  • Pruning : Guyot pulsard
  • Integrated and substainable culture for high quality bunches of grapes

Wine making process

  • Harvesting of the grapes in the earliest hours of the day
  • Bunches of grapes are sorted out, we put them in vat at low temperature (6°C) during 5 days
  • Then alcoholic fermentation with pumping over, it will give a fine wine, concentrated, powerful of redberries aromas
  • Malo-lactic fermentation is made only in oak barrel. Oak barrel comes from burgundy. We mature it during 18-24 monthes in oak barrel
  • To finish, Sancerre rouge is just settled and bottling by gravity to preserve it

Tasting Note

  • Color : A deep ruby red colour, very clear
  • Nose : Pure and clean. Small red berries aromas and woody, toasted notes are revealed.
  • Palate : With a good length in mouth and a very fine texture, it’s easy to find a real harmony between wood and fruit, mixed together. Vanilla added to blackberry and cherry notes make it ample and delicate.

Wine and Food

Try it with red meat served in sauce like « boeuf en daube » with carrots and potatoes. You can also drink it with cheese and cooked pork meats (charcuterie).
